Senior Mechanical Engineer

Build something that’s never been built before. Join a small team turning breakthrough food tech into real products, and own the systems that make it happen.

About the Role
We are hiring a Senior Mechanical Engineer to design, develop, test, and validate our next generation of food manufacturing systems. In this role, you will help scale R&D discoveries into novel food processing equipment and play a key part in delivering food-safe systems for our first product launches while laying the foundation for future hardware scale-up.

You’ll lead portions of hardware design, development, and validation, and create and maintain food safety documentation for equipment. This role reports to the Head of Engineering.

What You’ll Do

  • Design, develop, and validate food processing equipment from concept through commercialization

  • Translate R&D learnings into scalable, manufacturable systems

  • Create and maintain food safety documentation aligned with regulatory standards

  • Lead and support hardware builds, testing, and iteration cycles

  • Troubleshoot equipment and process issues in real-time to keep production running

  • Work cross-functionally with internal teams, co-manufacturers, and external partners

  • Contribute to the development of new systems that support future production scale

What We’re Looking For

  • 5+ years of experience in mechanical engineering, ideally in food process scaling or systems development

  • Strong CAD experience (Onshape preferred; also SolidWorks, Siemens NX, etc.)

  • Experience designing sanitary food equipment within regulatory guidelines (BOH, DPH, GMP, FDA, NSF)

  • Ability to solve complex, ambiguous problems and operate effectively in unknown territory

  • Hands-on troubleshooting skills across mechanical systems (motors, seals, components, etc.)

  • Experience leading projects end-to-end in fast-paced environments

  • Strong collaboration skills across technical teams and external partners

  • A startup mindset — adaptable, hands-on, and excited to take ownership

Nice to Have

  • Experience working with novel or first-of-its-kind manufacturing processes

  • Background working with co-manufacturers or scaling early-stage hardware

  • Exposure to food-grade equipment design and validation at commercial scale

What Success Looks Like

  • Reliable, scalable equipment supporting early product launches

  • Fast iteration cycles that improve system performance and manufacturability

  • Strong documentation and adherence to food safety standards

  • Effective troubleshooting that minimizes downtime and keeps production moving

  • Seamless collaboration across engineering, operations, and external partners

Why Join Us?

  • Inclusive and fun work culture

  • High ownership and impact in a fast-growing startup

  • Equity package

  • Unlimited PTO (that people actually take), Vision, Dental, 401k

About Lasso Labs

Lasso Labs is a food technology company rethinking how food is made for both people and the planet. Originating from research at Harvard, we developed a patented fiber-spinning process that uses centrifugal force to transform protein and fiber into structured food products.

Our system enables the creation of a wide range of foods using simple ingredients, without high heat or artificial additives. Designed to be scalable and energy-efficient, Lasso’s technology supports the development of healthier, more sustainable products across multiple food categories.
